Get Moving

When you’re at risk of developing diabetes, too much TV time or other time spent in sedentary activities increases your risk even more. Regular exercise can help you manage your weight, reduce high blood pressure and blood fats, sleep better, improve your mood, and boost your energy levels, all of which can also help alleviate stress.

The ADA recommends 30 minutes of moderate at least 5 days a week, and strength training, such as calisthenics or weight training, at least twice a week.

Pickled veggies

A super alternative to just having the usual ol’ veggies!

Ingredients for the pickling liquid

  • 1 cup apple cider vinegar
  • 1 cup verjuice
  • 4 T Stevia Liquid
  • 1 T salt
  • 1 T mustard seeds
  • 5 cloves garlic, thinly sliced
  • A selection of:
  • 100 g baby beetroot, peeled
  • 10 rainbow radishes
  • 200 g, baby Rainbow carrots, peeled

You may use any veggies of your choice depending on which phase you are on!

Cooking Instructions

Whisk the vinegar, verjuice, stevia and salt in a saucepan over a medium hea. Bring to the boil and turn off the heat. Mix in the mustard seeds and garlic.

Place the vegetables in jars and cover with the pickling liquid. Seal with an airtight lid and cool.

  • 1 plain yoghurt
  • 2 cups good-quality chicken stock
  • 2 x 170 g  asparagus spears punnets, trimmed
  • 2 garlic cloves, finely chopped
  • Ground nutmeg, to taste
  • Salt, to taste
  • 1 x 100 g asparagus tips punnet, blanched
  • 4 T coconut oil
  • 1 lime, zested
  • Arrowroot for thickening if needed

Place the yoghurt and chicken stock in a saucepan over a medium heat. Roughly chop the asparagus spears, then add to the saucepan with the garlic and cook for 10–15 minutes, or until tender.

Transfer to a blender and blend until smooth.

Return the mixture to the saucepan and place over a low heat, then season with nutmeg and salt.

Once warm, pour into serving bowls, and scatter over the asparagus tips. Drizzle with coconut oil and garnish with lime zest.
