Something delightfully different

500g deboned chicken breasts, cubed
3 tablespoons coconut oil
1 tablespoon chopped curry leaves
1 tablespoon chopped ginger
1 tablespoon crushed garlic
2 tablespoons Cape Malay curry powder
1 can whole tomatoes
Salt and pepper

Heat oil in a pan,add onions, curry leaves, garlic and ginger
Sauté for 5 minutes,add the curry powder, salt and pepper and stir
Simmer for 5 minutes, add the chicken and allow to brown for 5 minutes
Add the tomatoes, lower the heat and simmer for 45 minutes
Serve with Cauli Mash

Cauli Mash
1 punnet cauliflower, separated
Pinch of salt
Hot water
1 tsp coconut oil

Boil the cauliflower till soft
Remove from heat and drain the water
Add oil and salt and mash till smooth
